Based on the concept, “from farm to taste buds,” Freshark is a unique and refreshing place to enjoy natural and nutritious eats any time of the day. It’s the health-conscious person’s alternative to fast food — quickly prepared in an energy-efficient “smart kitchen” with an express grill that seals in flavors and juices … no microwaves, no fryers and no additives.

Even the décor is pure and clean … simplistic, if you will. Stools and benches surround unfussy tables, and from floor to ceiling, materials are natural, as opposed to man-made. Everything used, from bowls to napkins, is bio-degradable. Signs with graphics and slogans telling what it’s all about, line the walls.

Founded by Peter Kambitsis and Elias Kalogiros, Freshark was modeled after Ripe Juice Bar & Grill in Forest Hills, which the health-conscious partners opened in 2008. Teaming up with Mark Sarro, who is director of Operations and an experienced culinary wizard, they embellished on, and perfected the concept. Freshark in Rockville Centre is the first of a fast-evolving franchise.

An expansive menu offers breakfast boosts, freshly squeezed juices, smoothies, protein shakes, craft beverages, organic coffee and tea, detox soups, farm fresh salads, platters, bowls, wraps, grab and run snacks, burgers, sweets, and even a kid’s section. Beverages range from $1.79 to $6.99. Food prices run from $2.99 for fresh baked mini loaves (made with sweet potatoes, raisins, veggies and cinnamon) to $9.99 for a grilled salmon filet burger with the works.

Fresh flavors and creativity abound. Wraps or bowls (the same combos, but a bowl can have brown rice) include a choice of grilled chicken, salmon or Portobello mushroom. Hawaiian Bowl included mango, pineapple, onions, peppers and cilantro — delicious with salmon and long grain brown rice. Bella Bowl — roasted red peppers, tomatoes, mozzarella and balsamic glaze — was topped with a quinoa burger. Greek Wrap included feta cheese, cucumbers, tomatoes, vinaigrette and juicy, flavorful chicken.
